Caramel Snack Mix

This is one of the best snack mixes! You will not be able to stop eating it, and you will be asked for the recipe EVERY time you take it somewhere...promise! A friend of mine, that I met while living in Arkansas used to make this; it doesn't have a name, so I will call it: Caramel Snack Mix...so creative, huh? Do make this, and I promise it will be a hit for everyone!

Ingredients:
1 box of Quaker Oatmeal Squares cereal
2 cups Pecan halves
1/4 cup Butter
1/2 cup Brown Sugar
1/2 cup Light Corn Syrup
1 teaspoon Vanilla
1/2 teaspoon Baking Soda

Melt butter, then add brown sugar and syrup; cook until no longer grainy. Remove from heat, add vanilla and baking soda. Stir in cereal and nuts. Spread onto a greased, foil lined baking sheet. Bake at 250 degrees for one hour, stirring every 15 minutes.

Cinnamon Roasted Almonds

1 egg white
1 tsp cold water
4 cups whole raw Almonds
1/4 tsp salt
1/2 tsp ground cinnamon

Preheat oven to 250.  Lightly grease a 10x15 inch jelly roll pan

Lightly beat egg white; add water, and beat until frothy but not stiff.  Add nuts and stir until well coated. Mix sugar, salt, and cinnamon; and sprinkle over nuts.  Toss to coat.  Spread evenly on prepared pan.  

Bake for 1 Hr. in preheated oven.  Stir occasionally, until golden.  Allow to cool.  

Store in an air tight container.

Slow Cooker Cranberry Chicken

I am telling you what...I heart my crock pot! I use it 1-3 times a week. I use it as much as I can, and I always use a liner. Have ya'll seen these? They are the best thing, EVER! Cuts down on the soak time of the pot!

For the recipe you will need the following Ingredients:
15-18 Chicken Tenders
8 ounces Catalina Dressing
1 can Whole Berry Cranberry Sauce
I envelope Dry Onion Soup Mix

Put chicken in the crock pot, mix remaining ingredients and then spread over chicken. Cook on low about 7 hours or on high for about 3 hours. *Cooking time will vary, depending on your crock pot* Great served with brown rice; a delicious gravy will have cooked up so that you can spoon it over your chicken and rice. Enjoy!


Pumpkin Muffins

This recipe is simple, yummy and healthy!

Ingredients:
1 can of pumpkin (make sure you use pumpkin and not pumpkin pie mix)
1 box of cake mix (spice or devil's food)
1/4 cup water

Combine all ingredients and spoon into muffin pan, I always use liners, it's just easier to clean up!
Bake at 350 degrees for 25 minutes.
These are great for breakfast, snack or dessert!

Marshmallow Lollipops

To make these yummy treats you will need to start with Giant Marshmallows
Insert lollipop sticks into the middle of the marshmallow

 Melt Superwhite confectionery coating wafers into a microwave safe bowl.
Microwave at 30 second intervals until completely melted.  The chocolate should be smooth. (the chocolate is not ready in this picture)
 Dip Marshmallows, covering completely.  
Gently scrape off excess chocolate and immediately cover with sprinkles.
Place on a sheet of wax paper to harden or you could press the lollipop stick into a styrofoam block and dry upright. (I didn't have any styrofoam handy)
 Wrap them up as you desire.

Slow Cooker Sweet and Tangy Chicken

Ingredients

1 can pineapple chunks
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
2 cloves of garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
salt and pepper to taste
8-10 chicken tenders (either fresh or frozen)
1 cup barbecue sauce (a spicy or tangy flavor is best)

This is too easy of a dish...throw all of it in the crock pot! Seriously! Give it a stir and let the crock pot work it's magic! Times will vary, my crock pot cooks really fast, This should be done in 3-4 hours. Adjust time if yours takes a little longer to cook. Once all is cooked, take chicken out and shred it. To shred, lay chicken out on a cutting board, using two forks, pull it apart. Makes sense? Add chicken back to crock pot and mix with other ingredients. This is great served over rice, all alone, or on bread as an open face sandwich.

Breakfast Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 1 1/3 cups packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1/3 cup water
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 cups quick cooking oats
  • 1/2 cup wheat germ
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 1 cup raisins

Directions

  1. In a large bowl, using an electric mixer, beat together butter, peanut butter, brown sugar, and vanilla until creamy. Beat in eggs and water.
  2. Mix together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix into peanut butter mixture. Stir in raisins. Drop by ice cream scoopfuls 2 1/2 inches apart on greased cookie sheets. Flatten slightly.
  3. Bake at 350 degrees F (175 degrees C) for 18 - 20 minutes. Cool on cookie sheet for 2 minutes, then transfer to cooling racks.
